Ingredients:

  • 4 large eggs
  • 1 pound ground pork sausage
  • 1/2 cup all-purpose flour
  • 1 cup breadcrumbs
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup milk
  • Vegetable oil for frying

Instructions:

  1. Preheat oven to 350°F. Place eggs in a medium saucepan and cover with water. Bring to a boil, then reduce heat and simmer for 5-6 minutes. Remove from heat and run under cold water until cool enough to handle.

  2. Peel the eggs and set aside.

  3. In a mixing bowl, combine ground pork sausage, salt, black pepper, paprika, and cayenne pepper. Mix well until all the spices are evenly distributed throughout the sausage mixture.

  4. Divide the sausage mixture into four equal portions.

  5. In a shallow dish, whisk together the flour and milk until smooth.

  6. In another shallow dish, mix together breadcrumbs, salt, and pepper.

  7. Take one portion of the sausage mixture and flatten it into a thin patty. Place one boiled egg in the center of the patty and wrap the sausage around it, making sure it is completely covered.

  8. Roll the sausage-covered egg in the flour mixture, then in the breadcrumbs mixture, pressing gently to make sure the breadcrumbs adhere to the sausage.

  9. Repeat the process with the remaining eggs.

  10. Heat oil in a deep frying pan over medium-high heat. Fry the scotch eggs, a few at a time, until golden brown, turning occasionally, about 5-6 minutes.

  11. Transfer the fried scotch eggs to a baking sheet and bake in the preheated oven for 10 minutes to ensure that the sausage is fully cooked through.

  12. Serve the scotch eggs warm or at room temperature, garnished with chopped parsley or chives if desired.

Enjoy your delicious and satisfying homemade scotch eggs!
