Chicken Satay with Balinese Peanut Coconut Sauce - Chicken Kabobs - Chicken Skewers

Marinade;
1/4 cup of Peanut Oil.
Zest and Juice of 1 Lime.
1 tablespoon of Fish Sauce.
1 teaspoon of Coriander.
2 teaspoon of Sriracha.
1 teaspoon of Cumin.

Sauce;
1/2 cup Smooth Peanut Butter.
1/2 cup Coconut Milk.
2 teaspoon Sriracha.
2 teaspoon Fish Sauce.
2 teaspoons of Lime Juice.

Combine all of the Marinade ingredients in a bowl.
Slice the Chicken Breasts into 1/2 inch thick pieces.
Marinate the Chicken in the refrigerator for 3 hours.
Skewer the Chicken and grill on high for 4 minutes on the first side and 2 minutes on the second side.
Combine all of the Peanut Coconut Sauce ingredients in a saucier and warm through.  
Make sure to whisk as the Sauce heats up.
