Instant Pot Cheesy Potato Soup - Cheesy Potato Soup Recipe
Ingredients;
6 cups Russet Potatoes cut into 1/4 pieces
2 cups shredded Cheddar Cheese
2 cloves Garlic diced
1 tablespoon dry Parsley
1 teaspoon Salt
1/2 cup diced Onion
1 cup Corn
4 ounces Cream Cheese
1/3 cup Flour
2 cups Milk
3 cups Chicken Stock
Set the Instant Pot to Saute.
Add a couple tablespoons of Olive Oil and Saute the Onions and Garlic until translucent and soft.
Add Potatoes, 1 cup Chicken Stock, Parsley, Salt and Pepper.
Set pressure to high for 4 minutes.
Blend Milk, Cream Cheese, 2 cups Chicken Stock and Flour until smooth.
After 4 minutes are up, release the pressure valve and set the Instant Pot to Saute.
Add the blended Milk, Cream Cheese, Chicken Stock and Flour mixture to Instant Pot.
Continue stirring until the soup reaches your desired thickness.
Add the Cheddar Cheese and stir until it melts then add the Corn.
Serve it up with Cheese, Bacon, Chives or your favorite garnish.
